This unique recipe of pumpkin seed brittle with sesame seeds is a great fall snack. What could be better than pumpkin seeds and sugar together?

Pumpkin Seed Brittle with Sesame Seeds

 1 cup sugar
 ½ cup light corn syrup
 1 ½ cups pumpkin seeds
 1 tsp Colavita Olive Oil
 1 tsp vanilla
 1 tsp baking soda
 ½ cup sesame seeds

Prepare a baking sheet by lining it with parchment paper. Lightly oil the parchment with Colavita Olive Oil.


Combine sugar, corn syrup and olive oil in a 2 quart bowl. Microwave on high for 3 minutes. Stir in pumpkin seeds and microwave on high for 3 more minutes. Stir in vanilla and microwave for 1 ½ minutes more.


Remove bowl from microwave and add in baking soda, stirring constantly. The mixture will lighten in color.


Pour the mixture onto the prepared baking sheet sheet. Sprinkle with sesame seeds. Your brittle will harden in about 15 minutes. Enjoy!
