This quinoa oat clusters with fruit and nuts recipe is super easy to make. Flatten it, bake, and once it has cooled you can break it up into granola-sized pieces!

Quinoa Oat Clusters with Fruit and Nuts

 ¾ cup white quinoa
 1 ½ cups old-fashioned rolled oats 

 ½ cup shelled roasted sunflower seeds 

 ½ cup shelled, roasted pistachios 

 1 cup dried cherries or cranberries, coarsely chopped 

 ¼ cup brown sugar 

 ½ tsp coarse salt 

 ¼ cup maple syrup
 2 tbsp Colavita Olive Oil, plus more for greasing the pan 

 3 large eggs plus, lightly beaten

Preheat oven to 350°F.

Line a baking sheet with parchment paper and drizzle it with a little Colavita Olive Oil.

Bring 1 1/2 cups water to a boil in a small saucepan. Add quinoa; return to a boil. Stir quinoa; cover, and reduce heat. Simmer until the quinoa is cooked, about 20 minutes. Turn off the heat and cover the quinoa. Allow it to sit and steam for 10 minutes.

Transfer the quinoa to a large bowl. Add the oats to the bowl and mix to combine.

Add the roasted and chopped pistachios, the roasted sunflower seeds, dried fruit, sugar and salt, and mix.

Add the maple syrup, Colavita Olive Oil, and eggs. Stir everything together.

Spoon 1/4 cup batter onto your prepared baking sheet for each cluster; space 3 inches apart. Flatten to 1/4 inch thick. Bake, rotating sheet halfway through, until crisp, about 25 minutes.

Remove from the oven and cool.

Tip: You can also smooth the mixture onto the baking sheet in one large mass. Flatten it, bake, and once it has cooled you can break it up into granola-sized pieces!

Note: 1/4 cup maple syrup = 2 Maple UnTapped packets
