For a great summer-time meal, fire up the grill and make some Raspberry Balsamic Glace and Honey Glazed Chicken Skewers. The chicken will soak up their flavors overnight and make for a quick meal while tasting like you spent all day in the kitchen.

Raspberry Balsamic Glazed Chicken Skewers

Tools:
 Bamboo or Stainless Steel Skewers
Marinade:
 2 ½ tbsp Colavita Raspberry Balsamic Glaze
  cup Colavita Extra Virgin Olive Oil
 1 ½ tbsp honey
 2 cloves of garlic, crushed
 1 tbsp cayenne pepper
 ½ tbsp ground coriander
 1 tbsp ground cumin
 Salt and pepper to taste
For the Chicken:
 8 skinless boneless chicken thighs cut into one-inch chunks
 ½ red onion, cut paper-thin
 1 bunch of washed and dried fresh cilantro
 2 tbsp coarsely chopped pistachios
 3 tbsp Colavita Extra Virgin Olive Oil
 1 tbsp lime juice
 3 tbsp chopped mint

Prepare the marinade by combining all ingredients together in a bowl with the chicken chunks and refrigerate overnight. Remove from refrigerator one hour prior to cooking.

Soak the bamboo skewers in advance or use stainless steel ones.

Thread the chicken meat over the skewers.

Pre heat the grill to medium and place the chicken on the heated grill surface. These will take around 10 minutes in total to cook. Be sure to stay with the grill as the amount of natural sugars in the marinade will cause the chicken to burn if not attended. Turn the skewers frequently as needed, until they are completely cooked and golden this should take approximately ten minutes.

Garnish a platter with the chopped mint. Then place the chicken on the platter and mix the onion, cilantro, and pistachios together with the Colavita EVOO and lime juice, and top the chicken off with this spread.
