Our red lentil soup is packed with delicious flavors and will fill you up super quick. Enjoy with Colavita Pesto Sauce as a topping.

Red Lentil Soup

 4 tbsp Colavita Extra Virgin Olive Oil
 1 cup dried red lentils
 1 large shallot, finely chopped
 2 garlic cloves, crushed
 1 package Colavita Crushed Tomatoes
 1 tbsp chipotle chili in adobo sauce
 1 tsp salt
 1/2 tsp black pepper
 1 tsp smoked paprika
 1 tsp ground cumin
 4 cups chicken bone broth or stock (use a vegetable stock for a vegetarian/vegan version)
 Colavita Pesto for garnish

Heat a 5 qt stock pot over medium heat. Add the Colavita Olive Oil to the pot along with the shallot and sauté shallot for 5 minutes.

Add garlic and saute another 3 minutes.

Add the chili in adobo, the black pepper, paprika and cumin. Saute another 2 minutes.

Add lentils, broth/stock and tomatoes to this mixture and bring up to a boil. Reduce the heat, cover and continue simmering on medium low for 25 minutes.

Taste and season with additional salt, pepper and lemon as you see fit.

Pour into bowls and garnish with Colavita Pesto Sauce.
