Risi e Bisi (Venetian Rice and Pea Soup)

Risi and Bisi (Venetian Rice and Pea Soup) is a light and delicious soup with just a touch of sweetness from the peas.

 3 tbsp chopped onion
 6 tbsp Colavita Extra Virgin Olive Oil
 10 oz frozen peas
 6 cups Rachael Ray All-Natural Chicken Stock
 1 cup white rice (uncooked)
 3 tbsp chopped parsley
  cup grated parmesan cheese

In large saucepan or Dutch oven, saute' the onions in olive oil until golden.

Add peas and salt, cook for two minutes, stirring often. Add the stock; bring to a boil; add the rice, stir thoroughly.

Reduce heat to simmer; cook 25 minutes or until rice is tender.

Remove from heat; add the parsley and Parmesan cheese just before serving.
