Roasted asparagus with shallots is a simple and easy-to-make recipe with a spring taste. The white truffle balsamic glace makes this side dish stand out.

Roasted Asparagus with Shallots

 1 lb fresh asparagus, washed and trimmed
 1 medium shallot, peeled and thinly sliced
 2 tbsp Colavita Extra Virgin Olive Oil
 Sea salt and freshly ground black peppercorns, as desired to taste
 Zest from 1/2 lemon
 Shaved parmesan cheese, as desired
 2 tbsp Colavita White Truffle Balsamic Glace, plus additional for serving

Heat oven to 400 degrees.


Place asparagus and shallot on a large baking sheet. Drizzle with olive oil and toss to coat. Rearrange into a single layer and sprinkle with salt and pepper.


Roast in hot oven for 15-20 minutes, or until tender but still crisp.


When done, place on serving platter, sprinkle with zest and cheese, and drizzle with balsamic glace.
