Never had a pizza with grapes on it before? With this roasted grape, pear and fontina pizza recipe that will change, and for the better!

Roasted Grape, Pear and Fontina Pizza

 1 large bunch of grapes
 3 pears, thinly sliced
 1 cup fontina cheese, grated
 1 cup cooked pancetta
 2 tbsp Colavita Extra Virgin Olive Oil, divided
 sprinkle of salt
 Garnish: fresh thyme

Heat your oven to 350°F. Line a baking sheet with parchment paper and place the grapes on it.

Drizzle 1 tbsp Colavita Olive Oil over the grapes, and sprinkle them with sea salt.

Roast the grapes in the oven for 45 minutes. Set them aside for your pizza.

Heat your oven to 500°F. If you’re using a pizza stone, allow the stone to heat up in the oven for 30 minutes before baking on it.

Stretch out your dough onto a pizza peel dusted with flour. If you don’t have a peel and stone, use a baking sheet lined with parchment paper. Oil the parchment with a little Colavita Olive Oil so your pizza doesn’t stick.

Start with a layer of sliced pears, spreading them evenly around the surface of the dough.

Sprinkle the cooked pancetta on top of the pears.

Next, layer on the Fontina cheese.

Top the cheese with the roasted grapes.

Drizzle the pizza with 1 tbsp Colavita Olive Oil.

Slide your pizza into the oven and bake for 8-10 minutes, until the crust is golden brown and the cheese is bubbling.

Garnish with fresh thyme if desired!
