Crispy fresh romaine lettuce is chopped up into a salad and then mixed with olives, celery leaves, white onions and tomatoes. The real star is the chianti balsamic vinegar enriched with evoo to make a tangy sweet vinaigrette.

Romaine Salad with Red Wine Vinaigrette

 1 head of romaine lettuce chopped, washed and spun dry in a salad spinner.
 2-3 ripe tomatoes, diced
 1 large cucumber, peeled seeded and chopped medium dice
 ½ cup Colavita La Bella di Cerignola Olives, pitted and diced
 ½ cup celery and celery leaves, washed dried, and diced
 ¼ cup white onions, diced and rinsed
 1 tsp dried Italian or fresh chopped oregano
 2 tbsp dijon mustard
 4 tbsp Colavita Extra Virgin Olive Oil
 1 ½ tbsp Colavita Aged Red Wine Vinegar
Optional:
 1 cup feta cheese, diced

In a large mixing bowl, add the mustard and vinegar, then slowly whisk in the EVOO to create a creamy emulsion. Add all the ingredients to this emulsion tossing well with your hands or a salad fork to dress the greens completely and serve immediately.
