Salmon Salad with Cilantro Orange Vinaigrette

This salmon salad with cilantro orange vinaigrette is tangy, delicious and healthy. Made with Colavita White Balsamic Vinegar.

 2 salmon fillets
 1 package baby arugula
 1 avocado, thinly sliced
 3 Persian cucumbers, thinly sliced into rounds
 1 orange, segmented and sliced
Cilantro Orange Vinaigrette:
 ¼ cup Colavita Extra Virgin Olive Oil
 2 tbsp Colavita Balsamic Vinegar
 juice and zest from 1 large orange
 ¼ cup prepared orange juice
 1 cup cilantro leaves (stems removed)
 1 tbsp brown mustard

Grill salmon however preferred. Combine all ingredients, chopped, in large bowl. Top with dressing.

For Dressing:

Place all ingredients in a blender and blend well, until cilantro is finely chopped and all ingredients are well mixed. Best if refrigerated several hours or overnight to let the flavors meld.

Serving Suggestion: Serve dressing tossed in your favorite salad. Great with mixed greens, cubed chicken and mandarin oranges.
