This sheet pan salmon dinner is both incredibly easy and incredibly flavorful! It's a great dinner for any summer night inside. Recipe featured in our "What I Eat in a Day" series.

Salmon Sheet Pan Dinner

 1 lb 1 lb salmon filet
 1 1 small bunch carrots, cut into fries
 1 1 small broccoli head, cut into florets
 2 tbsp 2 tbsp Colavita Olive Oil
 ½ ½ Orange, cut into thin slices
 Salt and pepper
For the marinade:
 ½ cup 1/2 cup freshly squeezed lime juice
 ¼ cup 1/4 cup fresh chopped cilantro
 3 tbsp 3 tbsp Colavita Extra Virgin Olive Oil
 2 tbsp 2 tbsp water
 1 tbsp 1 tbsp honey
 1 tbsp 1 tbsp minced garlic
 1 tsp 1 tsp red chili flakes
 ½ tsp 1/2 tsp ancho chili powder
 ½ tsp 1/2 tsp ground cumin
 Salt and freshly cracked pepper
Garnish
 2 tbsp 2 tbsp chopped cilantro leaves

Preheat your oven to 425°F (210°C). Lightly oil a baking sheet or coat with nonstick spray.

Whisk together all the marinade ingredients in a small bowl.

Place carrots and broccoli in a single layer onto the prepared baking sheet. Stir in 2 tablespoons olive oil; season with salt and pepper, to taste, and mix well.

Make some space in the center for the fish fillet and place the salmon there. Pour the marinade over the fish. Place the orange slices over the top of the fish.

Bake until fish flakes easily with a fork and the broccoli begin to crisp up on the edges and have softened, about 20 minutes.

Serve the baked salmon garnished with cilantro, if desired.
