In need of something sweet on the go? These Apple Blondies are the perfect autumn breakfast bar or after school snack. Bake them in bulk and stock up in your freezer so you're always ready for post soccer practice munchies, school lunches, or a wholesome and delicious morning start!

 2 cups flour
 2 cups lightly packed dark brown sugar
 1 tsp kosher salt
 ¾ tsp baking powder 
 1 cup Colavita Extra Virgin Olive Oil, plus more for the pan
 2 tsp vanilla extract 
 3 large eggs
 2 large apples, peeled and chopped into small bite-sized chunks 
 Cinnamon sugar for dusting

Preheat the oven to 350°F. Grease an 8-inch square pan with Colavita Olive Oil and line with parchment paper.


In a large bowl, whisk together the flour, brown sugar, salt and baking powder.


In a separate bowl, whisk together the Colavita olive oil, vanilla and eggs. Stir the wet ingredients into the dry ingredients.


Gently mix in the apples.


 Pour the mixture into the pan, spreading it out evenly.


Bake until the center is set, about 35 minutes. Let cool in the pan on a rack for 10 minutes, then remove from the pan and cool completely.


Store blondies in the refrigerator, covered, for up to a week or freeze for 2 months.
