Sheet Pan Sesame Chicken

A fast, easy, and extra-delicious way to cook up a healthy dinner! This Sheet Pan Cashew Chicken features our own Colavita Spaghetti for an Asian-inspired twist on pasta! It all cooks on one pan (except for the pasta), so meal prep is simple!

Sauce:
 ¼ cup soy sauce
 ¼ cup honey
 2 tbsp rice vinegar
 1 tsp Colavita Olive Oil
 1 tsp sriracha
 2 garlic cloves, finely minced
 ½ cup water
 1 tsp cornstarch (use tapioca starch for paleo)
 1 tbsp minced fresh ginger
For the Chicken and Vegetables:
 4 boneless, skinless chicken breasts, cut into 1-inch chunks
 1 tsp sesame seeds
 1 green onion, thinly sliced
 2 bell peppers, chopped
 1 head of broccoli, cut into florets
 A few handfuls of snap peas, strings removed
 1 tsp Colavita Olive Oil

Preheat oven to 425°F.

Lightly oil a 12 x 17” baking sheet.

In a small bowl, whisk together soy sauce, rice wine vinegar, honey, ginger, garlic, Colavita Olive Oil, cornstarch and Sriracha. Set aside.

Place chicken and bell peppers in a single layer onto the prepared baking sheet. Stir in soy sauce mixture and gently toss to combine.

Place into oven and bake for 16-18 minutes, or until the chicken is cooked through. Stir in broccoli and snow peas during the last 7-10 minutes of cooking time.

Serve garnished with sesame seeds and green onion.
