Plain old shrimp skewers can get boring, so add some tropical fruit to the mix! Mango adds some sweetness, and caramelizes on the grill for even more flavor.

Shrimp and Mango Skewers

For the Marinade:
 1 cup tequila
 1/2 cup freshly squeezed lime juice
 1 ounce freshly chopped cilantro leaves
 2 cloves garlic, minced
 2 tbsp Colavita Extra Virgin Olive Oil
For the Skewers
 1 lb raw shrimp, shelled and deveined
 1 ripe but firm mango, peeled and cut into 1" cubes
 Colavita Extra Virgin Olive Oil
 Salt and Pepper
For the Garnish
 2 tbsp fresh lime zest
 1 tbsp chopped, fresh cilantro
Equipment
 Metal or wood skewers (if using wood, soak in water for 20 minutes beforehand)

Place the shrimp in a large bowl or resealable plastic bag. Combine all marinade ingredients and pour over the shrimp. Cover and marinate for 30 minutes and the refrigerator.

Heat your grill to medium-high heat.

Remove the shrimp from the marinade, reserving about ΒΌ cup marinade in a bowl. Place the shrimp on the skewers, alternating with mango cubes, and brush with the extra marinade. Season with salt and pepper.

Grill for 3 minutes on each side.

Remove from heat to a platter. Garnish with the lime zest and cilantro and serve immediately
