Sweet Olive Oil Cornbread

 1 cup stone ground yellow corn meal
 1 cup all-purpose flour
 ¼ cup granulated sugar
 1 tsp baking powder
 1 tsp flaked sea salt
  cup buttermilk
 2 large eggs
 2 tbsp clover honey
 ½ cup Colavita Extra Virgin Olive Oil, plus additional for pan

Heat oven to 400 degrees.

In a bowl combine the cornmeal, flour, sugar, baking powder, and salt.

In another bowl whisk together the buttermilk, eggs, honey, and Colavita Premium Extra Virgin Olive Oil. Add the dry ingredients to the wet ingredients and mix until just combined.

Brush 2 7-inch cast iron skillets with olive oil and divide batter evenly among prepared pans.

Bake, rotating pans halfway through baking time, 20-25 minutes or until golden brown.
