Ice cream base:
 2 cups heavy cream
 1 cup whole milk
 ½ cup cup sugar
 2 egg yolks
 1 tsp salt
 ½ tbsp vanilla bean paste
 salted honey syrup (homemade)
Salted honey syrup:
  cup honey
  cup water
 Pinch of salt
Toppings:
 3 dates
 evoo
 lots of flakey salt

prepare the salted honey syrup by combining equal parts honey and water with a pinch of salt, simmer over medium heat until it thickens

make ice cream base by combining all ingredients in the stove over low heat, stirring until the sugar dissolves and slowly tempering in the egg yolks, add in syrup and simmer over low heat stirring continuously

churn the ice cream & set to freeze overnight

when you’re ready to serve, drizzle medjool dates with evoo, honey & salt and bake for
about 5 minutes at 350
