Granita doesn't have to be sweet and we're here to prove it with this Tomato Basil Granita, made with fresh basil, garlic, and our aged red wine vinegar. Give it a try!

Tomato Basil Granita

 2 lbs tomatoes, chopped and strained
 1 tbsp sugar
 3 cups water
 1 garlic clove, minced
 1 tsp ground pepper
 1 tbsp Colavita Aged Red Wine VInegar
 1 bunch basil, cut into ribbons

Mix all the ingredients in a large bowl.


Pour the mixture into a metal cake or sheet pan and freeze.


Scrape with a fork starting after freezing for 30 minutes, and every 10 minutes after that (for a total of 2 hours) to break up the sugar crystals.


Serve in small bowls with extra chopped, fresh basil.
