 3 tbsp Colavita Extra Virgin Olive Oil
 1 large carrot, diced
 1 large celery stalk, diced
 ½ white onion, diced
 1 lb sweet Italian sausage
 32 oz Rachael Ray Low Sodium Chicken Stock
 1 tetrapack Colavita Diced Tomatoes
 20 oz fresh or frozen Tortellini
 Grated parm for serving

Heat 3 tbsp Colavita Olive Oil in a large stock pot over medium-low heat.

Add the carrot, celery and onion to the pan and sauté for about 5 minutes until they start to get soft.

Once the veggies are soft, add the sausage by squeezing out the sausages in little nugget size pieces into the pan.

Sauté until the sausages are browned, about 3-5 minutes.

Then, add 32 oz of chicken stock and a package of Colavita Diced Tomatoes. Add a bit more chicken stock from a second container to make a thinner broth.

Simmer over medium heat, stirring occasionally, for 20 minutes.

Taste and adjust for seasoning.

Add tortellini and cook according to package instructions.

Serve with grated parmesan cheese and a drizzle of Colavita EVOO.
