 ½ ripe avocado
 1 tbsp Dijion mustard
 2 tbsp lemon juice (from about 1 lemon)
 ¼ tsp salt
 ½ tsp white pepper

 2 5-ounce cans Albacore tuna in olive oil, drained
 ¾ cup diced tomatoes

In a medium bowl, use a fork to break up the chunks of tuna.

In a medium serving bowl add the avocado, Dijon mustard, lemon juice, salt, pepper and Colavita Roasted Garlic Extra Virgin Olive Oil. Whisk to combine.

Add the tuna, tomatoes, zucchini and arugula. Gently toss to combine. Season with salt and pepper.
