Watermelon, Arugula and Pine Nut Salad

A light and refreshing salad, the sweet watermelon works so well with the peppery arugula. Perfect in summer when watermelons are at their peak.

 1 tbsp fresh lemon juice
 1 tbsp Colavita Aged Red Wine Vinegar
 2 tbsp Colavita Extra Virgin Olive Oil
 ½ tsp salt (preferably Kosher)
 1 cup seedless watermelon balls (or cubes)
 1 cup canteloup balls (or cubes)
 1 cup honeydew melon balls (or cubes)
 5 oz baby arugula
 8 small mozzarella balls
 ¼ cup toasted pine nuts
 Freshly ground pepper, to taste

In a large bowl, whisk together the lemon juice, vinegar and salt.

Add the oil in a slow stream, whisking until emulsified.

In a large serving bowl, combine the melons, arugula and mozzarella balls.

Toss with the dressing and top with pine nuts.
