Our white bean hummus is guaranteed to provide you the quickest and easiest lunch, whether it be for your or the kids! Enjoy on multigrain bread.

White Bean Hummus Sandwich

For the Hummus:
 1 can cannellini beans (15 oz), drained and rinsed
 2 tbsp tahini
 2 tbsp Colavita Extra Virgin Olive Oil
 1 - 2 juice from lemons
 1 clove garlic, minced
 1 tsp ground cumin
 ½ tsp sea salt
 ¼ tsp freshly ground black pepper
For the Sandwich:
 4 slices thick cut multigrain bread
 1 small cucumber, sliced
 Colavita Sun-dried Tomatoes

First make the hummus. Blend all the hummus ingredients together. Add more Colavita Olive Oil as needed. Reserve in the refrigerator in a sealed container for up to a week.

Assemble the sandwich:

Toast the bread. Generously smear the hummus on one side of a slice of toast. Top with cucumber slices and sun-dried tomatoes. Finish with another piece of toast and serve.
