A healthy, savory, and satisfying snack or appetizer made with Colavita Cannellini Beans and Extra Virgin Olive Oil

 1 ½ cups Colavita Premium Extra Virgin Olive Oil (you will not use all the oil in the dip, and can reserve for another use)
 1 cup whole, peeled garlic cloves
 2 13.4-oz TetraPaks Colavita Cannellini Beans
 ¼ cup fresh lemon juice
 ½ cup roughly chopped parsley
 Colavita Sea Salt, to taste
 Colavita Black Pepper, to taste
 Vegetables for dipping, such as pepper, carrot, and cucumber strips

In a small saucepan over low heat, combine the Colavita Premium Extra Virgin Olive Oil and garlic. The garlic should be fully submerged in the oil. Simmer uncovered, stirring occasionally, until the garlic is lightly browned and completely soft, 30-45 minutes.

Set a fine mesh strainer over a container or bowl and strain the garlic from the olive oil. Set aside oil to cool slightly.

In a food processor or blender, combine the garlic, Colavita Cannellini Beans, lemon juice, parsley, sea salt, and black pepper, and blend until roughly combined. Slowly stream in the garlic-infused oil until the dip reaches your desired consistency. You will likely use ⅓ to ½ of the prepared garlic oil and can reserve the remainder in the refrigerator for another use.

Taste the dip for seasoning and adjust as desired. Transfer the dip to an airtight container and refrigerate for at least four hours before serving with your favorite dipping veggies.

Dip will last up to one week in the refrigerator in an airtight container.
