White Wine Creamy Garlic Shells by @breadbakebeyond

 8 oz Colavita Shells Pasta
 1 cup heavy cream
 ¾ cup Parmesan cheese, grated
 4 garlic cloves, minced
 ¼ white wine
 2 shallots, finely chopped
 2 tsp black pepper
 Kosher salt, to taste
 4 tbsp Colavita Premium Italian Extra Virgin Olive Oil
 2 tsp Colavita Roasted Garlic Paste
For Serving
 2 tbsp resh parsley, chopped (or chives)
 Chili flakes, to taste
 Ground black pepper
 Grated Parmesan cheese

Bring water to a boil in a pot, adding about 1 tbsp of salt. Cook the pasta according to the package directions until al dente. Drain, reserving 1 cup of pasta water.

Place a large skillet over medium heat, add Colavita Premium Italian EVOO, shallots, Colavita Roasted Garlic Paste and minced garlic. Sauté for 1 minute.

Pour in the white wine and cook for 3 minutes. Add the heavy cream, 1/4 cup of grated Parmesan cheese, salt, and black pepper. Mix well and reduce the heat.

Once the pasta is al dente, add it to the skillet along with the remaining Parmesan cheese and about 1/4 cup of pasta water. Stir everything together. Keep stirring until the pasta is fully cooked and the sauce has thickened and become creamy (you can add more pasta water if the sauce is too thick, but do it gradually until you get the desired texture).

Place the pasta in a bowl, sprinkle with chopped parsley, add chili flakes, and ground black pepper.

Finish with grated Parmesan cheese and serve warm.
