A light and fluffy zucchini pie bursting with flavor and cheesy goodness, with a touch of fresh parsley. Make it for breakfast, lunch, or dinner as a versatile and healthy alternative to a traditional dough-heavy pie.

Zucchini Pie with Mozzarella Cheese

 8 oz mozzarella cheese, grated
 3 cups zucchini, thinly sliced into rounds
 1 medium sweet onion, chopped
 ½ cup grated parmesan cheese
 ½ cup Colavita Extra Virgin Olive Oil
 1 cup pancake mix, such as Bisquick
 4 eggs
  cup fresh parsley, chopped
 Salt and pepper to taste

Preheat the oven to 350 degrees.


Place all ingredients into a large bowl and mix well.


Lightly grease a 10” baking dish and pour the zucchini mixture into the dish.


Place the dish in the middle rack of an oven for 35 minutes or until a toothpick comes out clean when inserted into the center of the pie.
