A strata is a breakfast casserole. And what’s easier than a casserole? Kids can easily help prepare this breakfast strata recipe. The instructions for this Breakfast Strata are incredibly simple, and kids can have fun mixing everything together. Best of all, when baked, this strata is a delicious, golden brown masterpiece of eggs and cheese.

 1 tbsp Colavita Extra Virgin Olive Oil
 4 cups cubed focaccia bread
 1 package sausage (any kind you like) crumbled and cooked
 10 large eggs
 2 cups whole milk
 1 ½ cups shredded Fontina Cheese, divided
 1 cup frozen spinach, defrosted, drained, and chopped
 1 cup sliced mushrooms
 1 jar Colavita Sun-Dried Tomatoes
 Kosher salt
 Freshly ground black pepper

Preheat your oven to 350°F and grease a 9"-x-13" baking dish with olive oil.

In a large skillet over medium-high heat, add sausage and cook, breaking up large pieces with a spoon, until golden, about 8 minutes. Remove from heat and let cool.

In a large bowl, whisk together eggs and milk and season with salt and pepper. Gently fold in bread, 1 cup cheese, spinach, mushrooms, tomatoes, and cooked sausage.

Pour mixture into the prepared baking dish. Top with remaining 1/2 cup cheese and bake 50 to 55 minutes, until cheese is golden and no liquid remains.

Allow to cool for 10 minutes before slicing and serving.
