 1 lb ground beef chuck
 2 tbsp finely chopped parsley
 1 tbsp red chili flakes
 ½ tsp smoked paprika
 ¼ tsp ground allspice
 ½ tsp ground cumin
 ½ tsp ground coriander
 ¼ tsp ground cinnamon
 4 medium scallions, diced
 Kosher salt and freshly ground black pepper, to taste
For the Tabouli:
 ½ cup cooked quinoa
 Juice from two lemons
 2 cups chopped fresh flat-leaf parsley
 ½ cup chopped fresh mint
 ½ lb ripe cherry tomatoes, quartered
 5 scallions, diced
 ¼ cup Colavita Extra Virgin Olive Oil
 Salt and pepper
For the Yogurt Sauce:
 1 cup Greek yogurt
 ¼ cup Colavita Extra Virgin Olive Oil
 2 tbsp fresh mint, chopped
 2 tbsp fresh dill, chopped
 Salt and pepper to taste
Make the Kefta:

Combine all the Kefta ingredients in a large mixing bowl and mix with your hands until all the spices and herbs are incorporated into the ground beef. Cover and refrigerate until ready to use.

Heat your grill to medium-high (about 425 - 450°F).

Form 2 tbsp of the beef mixture around metal skewers in a log formation.

Drizzle the beef on the skewers with Colavita olive oil.

Place the skewers on the grill and cook for 4 minutes, then flip and cook another 3 minutes.
Allow to rest 5 minutes.

For the Tabouli:

Mix all the tabouli ingredients together in a large bowl. Taste for seasoning and adjust as you like. Allow to stand at room temperature for 30 minutes (or in the refrigerator for longer) for the flavors to meld.

For the Yogurt Sauce:

Place all the yogurt sauce ingredients in a small mixing bowl and stir to combine. Taste and adjust for seasoning. If the mixture is too thick, you can thin it with a little water (try a tbsp at a time).
Refrigerate until ready to use.

Assemble:

Serve the kefta alongside the tabouli and yogurt sauce.
