These mini Phyllo Cup Bites are the perfect holiday appetizer. You can buy the phyllo shells in the freezer section of your grocery store. And for the filling—the sky’s the limit! We narrowed it down to three favorites: Fig and Brie, Spinach and Artichoke, and Ham and Egg. There’s something for everyone!

Mini Phyllo Mushroom Cups

For Fig and Brie bites
  cup prepared fig jam
 15 mini phyllo tart shells
 4 oz Brie cheese cut into cubes
 1 to 2 tbsp of sliced almonds
For Spinach and Artichoke bites
 8 oz package cream cheese
 1 cup grated Mozzarella
 ½ cup grated Parmesan Cheese
 14 oz jar Colavita Artichokes, drained, rinsed and chopped
 ½ cup frozen spinach, thawed and drained of excess water
 15 mini phyllo tart shells
For Ham and Egg Bites
 3 eggs, well beaten
 4 slices deli ham, chopped
 5 Colavita sun dried tomatoes, minced
 Salt and pepper to taste
 15 mini phyllo tart shells

Prepare three baking sheets lined with parchment paper.


Heat your oven to 400°F.

For the Fig and Brie Bites

Place the phyllo cups on one of the prepared baking sheets.


Spoon 1 tsp. fig jam into each phyllo shell.


Top with a cube of brie cheese and one sliced almond.


Bake for 10-12 minutes.

For the Spinach and Artichoke Bites

Place the phyllo cups on one of the prepared baking sheets.


In a bowl mix together, cream cheese, mozzarella and the parmesan until well blended. Add artichokes and spinach.


Mix well!


Spoon 1 tablespoon of mixture into each shell.


Bake for 10-12 minutes.

For the Ham and Egg Bites

Place the phyllo cups on one of the prepared baking sheets.


Combine eggs, ham and tomatoes in a small bowl.


Season with salt and pepper.


Fill each phyllo cup to the top with the egg mixture.


Bake for 10-12 minutes.
