Vegetable Foil Packets

These Vegetable Foil Packets may be our new favorite way to cook assorted veggies and keep them fresh and flavorful. It also assures that everyone gets their own little envelope of perfectly cooked veggies. We used a combination of carrots, zucchini, potatoes and onion for our mix, but the star is truly the roasted garlic which adds flavor and aroma to the other vegetables.

grilled veggies in foil packets

 4 medium zucchini
 6 large carrots
 12 oz baby Potatoes
 2 large red onions
 4 garlic heads
 4 tbsp Colavita Extra Virgin Olive Oil
 2 tbsp Colavita Balsamic Vinegar
 1 tsp smoked paprika
 salt and pepper to taste

Preheat the oven or your grill to 400°F (200°C).


Cut the zucchini into chunks. Peel and slice the carrots. Cut the baby potatoes into quarters. Cut the onion into quarters.


Trim the top of each garlic head (about 1⁄4 to 1⁄3 – where the stem is) so that the cloves are exposed. The outer skin should easily come off at this stage. There is no need to remove everything.


Now place all the veggies in a large bowl, except for the garlic heads. Drizzle the 2 tbsp Colavita olive oil over the veggies and sprinkle with salt, pepper and paprika.


Divide the veggies into 4 sheets of foil.


The one head of garlic head and place it in the middle of each packet. Drizzle the open end of the garlic with some the remaining Colavita Olive Oil.


Wrap each packet tightly and place them on your grill.


Grill for 30 minutes or until the veggies are done.
