Peanut butter and jelly hits a whole new level with our peanut butter and jelly squares. These are the perfect first day of school treat!
Preheat your oven to 350°F.
Beat butter, using a hand mixer or stand mixer, with sugar and peanut butter until creamy. Add the egg, and beat until combined. Add Colavita olive oil and vanilla, beating until incorporated and smooth.
Whisk together flour, salt and baking powder, then add to peanut butter mixture, mixing until just combined.
Spread half the mixture into a 9 x 13" pan lightly greased with Colavita olive oil and parchment paper up the sides to prevent the jam from sticking. Press the dough until it is flat and covers the bottom of the pan. Reserve the remaining dough in the fridge until later.
Place foil and baking weights on top or foil and another tray to keep the crust flat. Bake 10-15 minutes, then remove weights/tray and bake another 5 min or so, until the crust has turned a light brown color.
Remove from the oven, and while still warm, spread the jam on top of the crust. Then crumble remaining peanut butter mixture on top. Sprinkle chopped nuts over the top.
Return the pan to the oven and bake another 10-15 minutes until the jam bubbles, and the top crust has turned a light golden brown.
Cool, cut into squares and serve!
