This is an excellent side dish for Mother's Day. These baked french toast skewers with maple bacon have sweet and savory flavors and you can eat them mess free!
First prepare the bacon.
Heat your oven to 425°F and line a baking sheet with parchment paper. Place the bacon on the prepared sheet and bake it in the oven until it is mostly crispy (about 8 minutes).
Remove from the oven, blot with paper towels to remove some of the fat and immediately drizzle it with maple syrup. You can use a pastry brush to evenly coat the bacon with the syrup. Set aside to cool.
Reduce the heat of the oven to 300°F.
Once the bacon is cool, cut it into 1” square pieces.
In a large bowl, combine the milk, eggs, cinnamon and vanilla and whisk until well combined.
Heat a non-stick skillet on the stovetop over medium heat. Drizzle about 2 tbsp of Colavita olive oil in the pan.
Coat the pieces of bread in the egg mixture, allowing the mixture to soak into both sides of the bread.
Pan fry the bread, one or two pieces at a time (depending on how many will fit into your pan), for about 2-3 minutes per side. Remove to a plate.
Once all the bread has been cooked, cut the slices into 1” cubes. Thread them onto the wooden skewers alternating with the bacon pieces.
Place the skewers onto a baking sheet and place them in the oven for about 5 minutes to re-warm. Serve immediately with maple syrup and confectioner’s sugar.
