This is hummus' best self! Chickpeas are mashed, not puréed for a heartier texture and combined with Colavita Diced Tomatoes and fresh parsley for extra flavor!
Serves 4-6
Place the chickpeas in the bowl of a food processor. Add the chicken stock and pulse until the chickpeas are coarsely pureed.
Heat 3 tablespoons of Colavita Lemon Extra Virgin olive oil in a medium sauté pan over medium heat. Add the garlic and cook for 3 minutes, until aromatic.
Add the Colavita diced tomatoes and sauté for 3 to 4 minutes.
Add the chickpeas and cook for about 5 minutes, stirring occasionally, until heated through.
Remove from the heat and stir in the Parmesan, parsley, lemon juice, 2 teaspoons salt, and 1 teaspoon pepper and taste for seasonings.
Pour the mixture into a serving bowl, drizzle with extra Colavita olive oil, and serve with crostini.
