These Jack-o-lantern pizza pockets are just what your trick-or-treaters need to get in the spirit of the holiday! They’re fun to assemble and delicious to eat….one might even say they’re Spooktacular!
Preheat the oven to 350°F.
Line a baking sheet with parchment paper and oil the parchment with Colavita Olive Oil.
Place one of the pie crusts on the prepared baking sheet and roll the crust out so that it lays flat on the baking sheet.
Use a 4 inch cookie cutter to cut out 6 pumpkins.
Sprinkle the cheese evenly over the 3 of the pumpkin shapes. Top with slices of salami to cover, leaving a small border around the edges.
On the other three pumpkin shapes, use the paring knife to cut out small shapes for the eyes and mouth of your jack-o-lantern. Place these face pieces on top of the other halves.
Gather the dough scraps and re-roll the dough to a similar thickness. Cut out 6 more of your pumpkin shapes, using the other dough as well. Repeat until you have used all the dough.
Use a fork to crimp the edges shut.
Beat the egg in a small bowl. Brush the egg along the tops of the sealed pumpkins.
Bake the pizza pockets for 15-20 minutes until golden brown.
Serve immediately with Colavita marinara sauce for dipping.
