We all know that a Mediterranean diet is one of the most healthful you can enjoy. With an abundance of fresh ingredients, legumes, and extra virgin olive oil, it's a delicious way to keep your heart "healthy". Try this as a side to some grilled chicken or fish, or put in onto a mound of lettuce and enjoy a vegetarian lunch.
Heat your oven to 425°F.
Place the chick peas and tomatoes in small a rimmed baking sheet.
Make a well in the center and place the block of feta cheese there.
Drizzle with 2 tbsp of Colavita Olive Oil and season with salt and pepper. Make sure the feta is coated in olive oil.
Roast in the oven for about 20-25 minutes until the tomatoes start to char and wilt.
Remove from the oven and sprinkle the cucumber and onion over the top.
Mix the remaining Colavita Olive Oil and Red Wine Vinegar together and drizzle over the top of the salad.
Season with salt and pepper and garnish with the fresh parsley and mint. Serve warm with toasted bread.
