Preheat the oven to 400oF.
Line a large (17 x 12 inches) baking sheet with parchment paper.
Thinly slice your onion with a mandoline or knife and using a paper towel, pat it dry on both sides.
Evenly sprinkle a thin layer of cheese onto your baking sheet. Next, arrange the onion slices in a single layer over the cheese. Then lightly brush the tops of the onions with Colavita extra-virgin olive oil and season with smoked paprika and onion salt.
Bake for 16 to 20 minutes or until golden. Allow to cool for 10 minutes, then slice into squares and enjoy!
