Colavita Raspberry Vinaigrette is especially good when served over a spring mix of baby greens or spinach with sliced fresh strawberries and topped with some toasted almond slices.
In a small bowl, whisk together the vinegar, mustard and sugar.
Add the thyme; then slowly add the olive oil, whisking until emulsified. Season to taste with salt and pepper.
Using a spoon, scoop a heaping tablespoon-full of the greek yogurt and make a swash on one side of a small salad plate, like the above photo.
Pile a handful of mixed greens on the other side of the yogurt.
Add two small (about 1"long and 1/4" thick) pieces of blue cheese on top of the green.s
Sprinkle the raspberries and chopped hazelnuts on top.
Drizzle with raspberry vinaigrette and garnish with chopped chives. Serve!
