This recipe is based on our Marketing Director’s mom’s family-famous recipe for Pasta with Sausage. It’s a crowd pleaser, and quick to throw together. We modified the recipe to include lean protein, and some iron for powering up your pre-ride dinner.

Turkey Sausage Pasta with Sun-dried Tomato Sauce
Bring a large pot of water to a boil.
Salt the water generously and add the pasta.
Cook until al dente (check package instructions).
Drain the pasta in a colander, and drizzle it with Colavita Olive oil. Set aside until
ready to use.
Heat the oil in a large pan over medium-low heat.
Add the sausage to the pan and sauté. As the sausage cooks, break it into small pieces with a wooden spoon. Cook until the sausage is browned and cooked through, about 8-10 minutes.
Add chopped onions and garlic and sauté about 3 minutes, until translucent.
Season with salt and pepper. Add the dried oregano and hot pepper flakes.
Pour in the tomatoes.
Reduce the heat and cook to very low and simmer for 20 minutes.
Stir in the spinach and cook for 2 minutes.
Add the heavy cream.
Place the cooked, drained pasta into a large pasta serving bowl.
Add in the sauce and toss to coat.
Garnish with grated Parmesan cheese, and chopped parsley.
