Summer Crostini with Eggplant Paté, Arugula & Tomatoes
Fresh, colorful, and full of Mediterranean flavors, these crostini are perfect for warm-weather gatherings.

Directions
Arrange the baguette slices on a baking sheet and lightly spray with Colavita Extra Virgin Olive Oil.
Toast in a 360°F oven for 8–10 minutes, or until golden and crisp.
Spread a generous layer of Colavita Eggplant Paté over each crostino.
Top with a few arugula leaves, sliced cherry tomatoes, and shaved Parmigiano Reggiano or Pecorino cheese.
Serve immediately as an appetizer, aperitivo snack, or light summer bite.
