Made with fresh heirloom tomatoes, crispy bacon, and gruyere cheese, this balsamic bacon and tomato grilled cheese will never disappoint!
Season sliced tomatoes with sea salt and set aside.
Place bacon on a parchment lined baking sheet. Cook it in the oven at 425°F for about 8 minutes, or until desired crispness.
Remove the bacon from the oven and immediately brush it with Colavita Balsamic Glaze. Feel free to use as much as you like!
Spread mayonnaise on one side of each piece of bread.
Heat a skillet over medium heat. Place bread mayonnaise side down on the skillet.
Top the bread with gruyere cheese, tomatoes, and cooked and glazed bacon.
Cover the skillet and cook for about 3 minutes. This will allow the cheese to melt.
Once the cheese is melted, flip the other toasted bread slices on top.
You may flip occasionally until both sides of the sandwich are toasted to your liking.
