This recipe for Cinnamon Sugar Chickpeas is a great way to snack on something just a little sweet, while also getting protein and fiber! Chick peas toast up crispy in the oven, which make them very snack-able. Adding a little sugar and spice makes them extra nice!

Preheat oven to 400º. Toss the chickpeas with Colavita olive oil, sprinkle with salt, and place them on a baking sheet lined with parchment paper.
Roast them in the oven for 40 minutes.
Meanwhile, mix the sugar and cinnamon together.
After 40 minutes, remove the chick peas from the oven and sprinkle on the sugar mixture, making sure to coat all the chick peas evenly.
Place them back in the oven and roast them for another 8-10 minutes.
Remove from the oven and allow to dry completely.
Serve!
NOTE: Make sure you remove as much moisture as possible after rinsing the chickpeas. Use paper towels to remove any surface moisture, and if you have time, let them air-dry for 30 minutes.
