Cracked Olive Oil Chimichurri by @sarah_licious_eats
Ingredients
1 jar Colavita Country Style Pitted Olives
⅓ cup Colavita Red Wine Vinegar
1 box Colavita Chickpea Beans, rinsed
1 ½ cups turkey deli meat, chopped
¼ cup parsley
¼ cup cilantro
1 cup mini mozzarella balls
1 tbsp dijon mustard
½ tsp salt
½ English cucumber, diced
1 clove garlic
½ shallot, chopped
Directions
1In a bowl add cucumber, shallot, parsley, cilantro, turkey deli meat, mozzarella balls, and the rinsed chickpeas.
2Next use all the extra virgin olive oil in the olive jar and chop the olives in the jar.
3Add them to your bowl and make your dressing (red wine vinegar, dijon mustard, salt, and garlic).
4Mix together and place into an air tight container for up to 4 days in the refrigerator.
