The simplest desserts are often the best and these grilled peaches wish mascarpone are no exception. It's even healthy-ish enough to have for a midday snack
Preheat a grill to medium-high.
Brush the peach halves with Colavita Olive Oil and place them, cut side down, on the grill.
Cook until lightly charred, 2 to 3 minutes.
Transfer the peaches, cut side up, to a baking sheet, and drizzle them evenly with 4 tbsp of the honey.
Place the baking sheet on the grill and close the grill. Cook until the peaches are soft, about 5 minutes.
Using oven mitts, remove the baking dish from the grill, and place the peach halves on a large serving dish.
Divide the mascarpone evenly among the fruit, placing one dollop on each peach half.
Drizzle with the leftover 2 tbsp honey.
Top with chopped hazelnuts and fresh thyme.
