This Italian sausage soup with tortellini is a one pot hearty meal. Serve with some crusty Italian bread and a full-bodied red wine on a cold winter day.
In a large pot or Dutch oven, brown the sausage. Remove and drain the fat. Add oil; saute the onion and garlic until the onion is tender, about 5 minutes.
Return the sausage to the pot along with the tomatoes, carrots, broth, tomato sauce water, wine, oregano and basil. Bring to a boil; reduce heat and simmer, uncovered 30 minutes.
Remove any fat that comes to the surface of the soup. Add the tortellini, zucchini, green pepper and parsley. Cover and simmer 35 - 40 minutes, or until the tortellini are tender. Taste and adjust seasonings.
Ladle soup into warmed bowls, top with a tablespoon of Parmesan cheese and serve. Pass additional cheese, if desired.
