Preheat oven to 400 degrees.
Combine eggs, sugar, olive oil, poppy seeds, lemon juice , lemon zest and sour cream in a mixing bowl. Beat well to combine, mixture should be fluffy and slightly glossy.
Sift flour, salt, baking soda and baking powder together in medium size bowl. Fold into wet mixture, stirring just to combine. Do not over beat.
Pour into greased muffin tins. Bake in 400 degree oven for 22 minutes or until toothpick, when inserted into the center comes out clean.
