This "anytime" Roasted Tomato Frittata with Jalapeño Sausage is perfect for those who like their food with a little kick. It is simple to make, and simply delicious.
Preheat oven to 400 degrees F. Heat 1 tbsp oil in a 10-inch ovenproof nonstick skillet over medium heat. Add sausage and brown slightly. Remover, slice and set-aside.
Add 1 tbsp oil, scallions, roasted tomatoes and jalapeno, saute until tender. Add the sausage, garlic, parsley, salt, pepper and oregano, saute 2 more minutes.
In a mixing bowl, whisk the eggs until well blended. Pour eggs over sausage and tomatoes. Sprinkle cheese on top. Cook over low heat for 7 - 8 minutes until bottom is set and top is a little runny.
Place skillet in oven and cook until top is golden brown, about 7 - 8 minutes. Remove and carefully transfer onto a serving platter. Slice and serve.
