Gnocchi are small dumplings made with potato. Colavita’s Potato Gnocchi taste just like homemade and with this recipe for Gnocchi with Pesto Sauce, you’ll be in and out of the kitchen in under 30 minutes, but everyone will think you cooked for hours! Serves: 4.
Bring a large stock pot of water to a boil. Once it is boiling, salt it generously.
Add the gnocchi to the boiling water and cook until they float to the top, about 4 minutes.
Once they are floating on the surface of the water, you can either fish them out with a strainer, or drain into a colander. Make sure to reserve 1 cup of the cooking water.
Add the cooked gnocchi, the Colavita Pesto and ¼ of the gnocchi water to a large skillet over medium-low heat.
Gently stir the sauce and gnocchi together until the sauce coats all the gnocchi, adding more pasta water if necessary (if the mixture seems dry). Drizzle with 1-2 tbsp Colavita olive oil and mix one last time.
Serve with fresh basil and grated parmesan cheese.
