Sheet Pan Gnocchi with Sausage and Peppers by @breadandbasil
Preheat the oven to 425°F.
On a large sheet pan, add the uncooked gnocchi, bell peppers, and onions. Drizzle with Colavita Premium Selection Olive Oil, then sprinkle with oregano, red pepper flakes, and season with Colavita sea salt and black pepper. Toss well to combine and coat all the gnocchi and vegetables, then spread into an even layer.
Add the sausages on top of the gnocchi mixture. Bake for 25-30 minutes, rotating the sausages halfway through. The sausages should be deeply browned, and the gnocchi very lightly golden brown.
Remove the pan from the oven. While hot, sprinkle with grated parmesan cheese and fresh parsley, and toss to coat evenly. Season with any additional salt and pepper as desired and serve hot.
