Try this delicious spiced sweet pumpkin soup to start your Thanksgiving or holiday dinner. It's like eating pumpkin pie out of a bowl, but only more savory.
In a saucepan, stir together the olive oil, pumpkin, brown sugar, molasses and spices.
Heat over medium heat, stirring frequently. When mixture starts to bubble, reduce the heat to low and simmer; stirring frequently.
Meanwhile, in a separate saucepan, heat the milk, do not boil. After pumpkin mixture has simmered for about ten minutes, pour in the hot milk and stir to combine. Simmer for a couple of minutes before serving.
Garnish with chopped chives and toasted croutons, if desired.
