Sweet Potato Apple Pizza
Our sweet potato apple pizza is not only tasty but the also the ultimate fall pizza! Have this for lunch, dinner, or even dessert!

Heat your oven to 350°F. Place the sweet potatoes on a baking sheet and roast them in the oven for 1 hour, until soft.
Once cool, remove the skins and mash them in a medium bowl. Set aside.
Heat your oven to 500°F. If you’re using a pizza stone, allow the stone to heat up in the oven for 30 minutes before baking on it.
Stretch out your dough onto a pizza peel dusted with flour. If you don’t have a peel and stone, use a baking sheet lined with parchment paper. Oil the parchment with a little Colavita Olive Oil so your pizza doesn’t stick.
Spread a layer of mashed sweet potatoes on top of the stretched out dough. Add apple rings on top of the potato, spreading them out symmetrically.
Sprinkle the brown sugar and a pinch of salt on top of the apples.
Layer the grated Manchego cheese on top of the apples.
Drizzle about 1 tbsp of Colavita Olive Oil over the top of the pizza.
Slide your pizza into the oven and bake for 8-10 minutes, until the crust is golden brown and the cheese is bubbling.
