1Heat your oven to 350°F. Place the sweet potatoes on a baking sheet and roast them in the oven for 1 hour, until soft.
2Once cool, remove the skins and mash them in a medium bowl. Set aside.
3Heat your oven to 500°F. If you’re using a pizza stone, allow the stone to heat up in the oven for 30 minutes before baking on it.
4Stretch out your dough onto a pizza peel dusted with flour. If you don’t have a peel and stone, use a baking sheet lined with parchment paper. Oil the parchment with a little Colavita Olive Oil so your pizza doesn’t stick.
5Spread a layer of mashed sweet potatoes on top of the stretched out dough. Add apple rings on top of the potato, spreading them out symmetrically.
6Sprinkle the brown sugar and a pinch of salt on top of the apples.
7Layer the grated Manchego cheese on top of the apples.
8Drizzle about 1 tbsp of Colavita Olive Oil over the top of the pizza.
9Slide your pizza into the oven and bake for 8-10 minutes, until the crust is golden brown and the cheese is bubbling.
