Not only does this chocolate olive oil shell only take 20 quick minutes to make, it can go on any dessert! We recommend with ice cream, but let your imagination fly!
4 scoops chocolate ice cream, divided
4 scoops strawberry ice cream, divided
4 scoops peach ice cream, divided
1 cup fresh strawberries and peaches, chopped
3 tsp Colavita Olive Oil
10 graham crackers, finely pulsed in a food processor
4 ounces semisweet chocolate (61 percent cacao), chopped
1Place chocolate in a heatproof bowl set over (not in) a pan of simmering water. Stir until melted. Remove from heat and stir in remaining the colavita olive oil. Whisk until smooth.
2Divide the graham cracker crumbs and fresh fruit among the bowls.
3Place 1 scoop of each ice cream flavor in each bowl, on top of the fruit and grahams.
4Pour the chocolate olive oil mixture over the ice cream, covering the top. It should harden. Serve immediately.
