Bring a large pot of salted water to a boil. Cook the pasta according to the directions on the packaging. Drain.
Heat up the Colavita Olive Oil and maple syrup in a large skillet over medium heat. Add the apples, pecans and currants and stir to coat evenly with the oil and syrup.
Add the cooked pasta to the skillet and stir to coat.
Add the cinnamon, black pepper, sea salt and stir to coat. Simmer for 10 minutes until the apples are soft. If the pasta seems dry, add a bit more Colavita Olive Oil.
